High vegan protein porridge

Coconut & Cinnamon Vegan Protein Porridge

This is honestly the most delicious porridge you will ever eat, which is also high in vegan protein, good fats, cinnamon and antioxidants.

 

It is eczema friendly, gluten free, and dairy free – perfect for all of the family!

 

I am not a fan of protein powders in any way – but there is one brand I do recommend – if you still don’t want to use a protein powder – there are other delicious and healthy options you can use!

 

This is a variation of a Tropeaka berry protein porridge which I became hooked on as winter set in – I took it up a level and added a few extra goodies to increase its omega level and skin glow factor!

 

Ingredients

 

Serves 1

 

1 cup organic gluten free rolled oats or quick oats – even if you are not gluten intolerant – avoid oats grown close to wheat because of the glyphosates sprayed on the wheat are highly toxic to us.

 

1 cup water (filtered ideally)

 

1 cup organic coconut milk or coconut cream for more healthy fats

 

1 tablespoon organic shredded or flaked coconut

 

1 tablespoon organic protein powder or organic hemp seeds

 

½ teaspoon organic cinnamon

 

1 teaspoon organic vanilla

 

½ tablespoon organic chia seeds

 

Frozen berries or paleo muesli, banana, maple syrup or honey to top and plant milk of your choice if you need some.

 

Add all the ingredients (not the topping options) into a saucepan and cook on medium/high till it starts to bubble – turn down the heat.

 

Stir constantly until cooked and thickened to your liking – you may need to add more water.

 

Top with toppings of your choice!
